This cake is super delicious and moist (and the batter is also delicious). Our entire family loves it. This cake would be great in the fall when apples are in season and at their best, but it taste great at anytime of the year.

  • 1 tsp vanilla
  • 2 cups sugar
  • 3 eggs, lightly beaten
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 3 cups chopped raw apples
  • 1 1/2 cups chopped pecans or walnuts, optional
       For topping:
  • 1 stick (1/2 cup) butter
  • 1 cup brown sugar
  • 1/4 cup milk
Directions:

Preheat the oven to 350 degrees Fahrenheit.
Mix together oil, vanilla, sugar, and eggs.
Add flour, baking soda, salt, and cinnamon.
Stir/fold in chopped apples and pecans/ walnuts, if desired.
Pour into well greased and floured pan ( 1 Bunt pan, 1 9x13 pan, or 2
loaf pans)
Bake for 45 minutes to an hour, or until a toothpick inserted into the center comes out clean.
